The Bikini Cocktail

Yields 10 guests

To make the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Put every ingredients into a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, take off the heat allowing it to cool down completely. Decant into an sterilised bottle, close it keeping it chilled, where it will keep for about one month.

For the Batch Mix: Combine the specified spirits and syrup in a large bottle, leave to sit for 60 minutes, then strain preferably using muslin, making it completely strained.

To serve: Measure 85ml of the batch mix into a stirring glass containing ice, gently stirring lightly for one minute to cool it down. Pour into a frosted cocktail glass or similar, decorate with some cranberries and finish by giving it a light spray of mandarin oil over the drink.
